how late in the season do you stay in the water?

I wonder how late in the season people are staying in the water? Someone told me they love fishing (salt water) in dec. He said the fish are huge and hungry.In dec, I'm hungry for hot chocolate and a fire.It was interesting to know people are having a great time on the water on a nice december day.
